This classic wine represents our main cuvée, characteristic of the style of the estate.
Grape variety:
Grenache blanc 43%, Roussanne 35%, Clairette 12%, Picardan 10%
Soils:
This cuvée is the blend of our best parcels of white Grenache and Roussanne on rolling stones and limestone flint.
Harvest:
After waiting for the optimum ripeness, the grapes were harvested manually between August 22 and September 13,2017.
Vinification:
The grapes are picked by hand, early in the morning to keep fresh, sorted and packed in a way to limit the crushing. The bunches are pressed gently, in a pneumatic press. The musts are selected, then sent to the stainless steel tank, thermo-regulated. After settling in the cold, the Roussannes and part of the Grenache are filled in barrels to carry out the alcoholic fermentation.
Aging:
36% of the wine is aged in barrels during 8 months
Tasting:
Pale gold color with silver reflections. A nose that opens with notes of white flowers and sweet spices, then lightly toasted brioche. The attack is lively, then the roundness brought by the aging envelops the papillae. The finish is long and confirms the impression of minerality felt in attack. To be enjoyed now and for 10 years.
Food pairing:
To serve at 11-12 ° C, as soon as the aperitif, then continue on a carpaccio of St Jacques citrus sauce, a grilled sea bass, or a nice truffle brouillade.
