We wished with this superb cuvée to pay tribute to Admiral de Gérin and Grenache, the admiral of Châteauneuf-du-pape's grape varieties.
Grape variety:
100% Grenache noir.
Terroir:
This cuvée comes from one of our best plot of Grenache on a soil of river stones with red clay underneath, located on one of the highest hills of the appellation.
Harvest:
After waiting for the optimum ripeness, the grapes were harvested manually on September 27, 2016.
Vinification:
The grapes are 100% destemmed and crushed and then transfered in a concrete tank. The temperature is maintained around 25 ° C. during the alcoholic fermentation. The maceration lasted about 30 days during which, pump-over and rack and return are made daily according to the tastings of our oenologist Philippe CAMBIE.
Aging:
Grenaches are aged for 18 months in new oak half-muids of 600l.
Tasting:
This cuvée in tribute to the founder of Château de Vaudieu, shows both the finesse and the power of the Grenache. On the nose, it has notes of Provence herbs and cherry jam, while the mouth balances between a powerful fruit and a minerality characteristic of the soil.
Pairing food and wine: A Navarin of lamb, a rib of braised beef, a roast
suckling pig.
