Terroir:
This cuvée is the blend of our best plots of black Grenache and syrah on sandy soil and red sandstone.
Harvest:
After waiting for the optimum ripeness, the grapes were harvested manually between 25 September and 2 October 2015.
Vinification:
The grapes are destemmed and crushed and then conveyed in a stainless steel tank. The temperature is maintained at around 25 ° C. during the alcoholic fermentation. The duration of maceration is approximately 30 days during which, pump-over and rack and return daily according to the tastings of our oenologist Philippe CAMBIE.
Aging:
Syrahs are aged for 12 months in a Burgundy barrel of one wine and more, while Grenache ages in concrete vats.
Tasting:
A robust ruby ??color. The nose reveals a subtle blend of strawberry jam and cocoa bean, then notes of white pepper take the ascendant. In the mouth, the attack is fresh thanks to a fine concentration of menthol tannins, which evolves towards notes of graphite. To be drunk from now and for hte next 20 years, at 16 ° C.

on a leg of lamb decorated with a beautiful au gratin dauphinois, a roasted suckling pick.
